水产品冷链贮运品质感知及预测技术研究进展Research Progress on Quality Perception and Prediction Technologies in Cold Chain Storage and Transportation of Aquatic Products

摘要(Abstract):
【目的】系统梳理水产品冷链贮运过程中品质变化的关键影响因素,归纳先进感知与预测技术的原理、性能及应用效果,剖析现有技术的局限性,为品质控制和货架期精准预测提供理论参考。【方法】在分析温度、微生物、包装等关键影响因素的基础上,依据技术原理差异,将品质相关技术分为感知技术和预测技术两大类,综合分析各类技术的特点及应用场景。【结果】微生物、温度与包装等是影响水产品品质的核心因素;电子鼻、光谱成像等技术可高效感知品质变化;动力学模型结合智能算法能实现货架期精准预测。【结论】单一技术难以满足水产品冷链全链条品质管控需求,未来需推动多技术融合,重点发展智能化实时监测系统、低成本便携式检测装备及绿色环保包装材料,实现冷链品质管控的精准化、高效化与绿色化。
