香港牡蛎中锌元素的分布及存在形态Distribution and Existential Forms of Zinc in Crassostrea hongkongensis

摘要(Abstract):
【目的】研究香港牡蛎(Crassostreahongkongensis)中锌元素的分布及存在形态,为其开发利用提供基础数据。【方法】采用ICP-MS技术检测锌元素在全脏器、鳃、外套膜、闭壳肌、内脏团及牡蛎提取组分中的含量,初步分析其存在形态。【结果】牡蛎全脏器锌质量分数达(1 267.51±2.85)μg/g(干基,下同),组织器官中鳃的锌质量分数最高,达(2 242.63±22.10)μg/g;内脏团中的锌占牡蛎全脏器总锌的占比达45.46%;牡蛎全脏器中无机态与有机态锌元素比例约为1.55∶1。从去内脏牡蛎中提取到一种富锌水溶性多糖组分,进一步分离的多糖组分CT1锌质量分数高达922.18μg/g,红外光谱分析表明其存在多种可与锌配位的官能团。【结论】香港牡蛎富含锌元素,其分布存在组织差异,且无机态锌含量高于有机态锌,蛋白锌和多糖锌是有机态锌的两种重要存在形态,水溶性多糖结合锌较多。
