甲壳类水产品氨基脲残留来源研究进展Advance in Research on Other Sources That are Linked Neither to the Illegal Use of Nitrofurazone in Crustacean Aquatic Products

摘要(Abstract):
【目的】厘清甲壳动物体内氨基脲(SEM)物质来源途径及其为内源性物质提法的科学验证现状,以便修订或完善现有法律法规。【方法】综述了甲壳类水产品中SEM来源途径及验证研究。【结果】甲壳类水产品不同组织普遍存在SEM成分,除养殖过程人为非法使用呋喃西林药物外,甲壳类水产品中SEM可能通过产品加工过程次氯酸盐消毒处理,含有偶氮二甲酰胺的面粉裹粉处理,养殖水体和沉积物环境以及水体中藻类及饲料中引入。有关SEM是水生甲壳动物内源性物质的科学提法目前缺乏直接、有效的科学实验证据。【结论】在判定甲壳动物养殖过程是否非法使用硝基呋喃监管过程中,要求产品中SEM不得检出的判定标准过于严格,亟需深入开展甲壳类水产品中SEM来源途径与内源性SEM验证的科学研究,为甲壳类水产品SEM残留限量标准的修订和采样标准的制定提供科学依据。
